Braised deer shoulder and bone in neck roast

Bone-in Shoulder:
Cooked the whole shoulder with bone in.
Seasoned with salt/pepper/garlic and browned in roasting pan at 450* for 30 minutes till it got a rind.

Made a stock with beef stock, water, little oil, salt & pepper, bay leaves, whole garlic, and some montreal seasoning.
Put it outside in big stock pot over propane burner and kept it at a simmer for 4.5 hrs.... Holy Moly. Meat released from the bone, tendons turned into butter, and meat shredded with a fork.

Very, very good. Served on Hawaiian rolls with a little bit of the stock mixed back in for moisture.

Neck roast off little deer killed with pistol...
Let it get to room temp. Seasoned with oil, salt & pepper, and some steak rub.
Browned in pan on all sides for about 10 minutes.

Dropped into the crockpot for 6 hrs on low with apple cider vinegar and bbq sauce... turning every couple hours.

Wowzer. Very tasty. Not stringy at all. Was impressed for the first try.

Gonna keep more whole necks from now on.

Its it just me but neck roast receipts make me have wild dreams? Anything with spinal fluid and natural dmt?

Wrap a neck or shoulder roast in aluminum foil with horseradish and whole berry cranberry sauce. Put 1/2 inch water in Crock-Pot and cook on low 6 or 8 hours. Serve with rice or mashed taters. Lazy Man dinner but wow is it good.
