Frank's Grilled Wild Turkey Strips

If you turkey hunt and like a little tang and heat in your grilled meat, give this a try.

Slice up half a turkey breast into 1-inch strips, across the grain as much as you can. Marinate your strips in a mixture of Frank's Red Hot, minced garlic, salt & black pepper, and a splash of melted butter or your favorite cooking oil. (just enough butter or oil to coat the strips) (substitute Frank's for Texas Pete or Tobasco...it's all good)

Heat up your grill hot as it will go and sear the strips on one side just like you would a good steak. Rotate them a quarter turn after about 2 minutes to give them some nice grill marks. Flip them after about 5 minutes and then cook them only as much longer as is necessary to cook them through. 5-7 more minutes should be long enough. Reduce the heat if you can and close the lid if your grill has one. Try not to overcook them as they'll dry out.

When you take them off the grill, swab them with a stick of butter to moisten them up a bit...or drizzle melted butter over them. By the way, if you don't like the heat, just leave the Frank's out.....plain old grilled wild turkey is pretty delicious as-is.
