Whole teal

Old Mossy Horns
Plucked teal. I chopped up a apple and half slice of bacon and stuffed the body cavity.
Salt and pepper on the outside of bird with a brushing of olive oil.
Separate bowl I mixed some chicken stock with can of cream of celery.
Set teal breast side up in baking dish and poured mixture around the teal until it was about halfway up the bird.
25 minutes at 425 and birds were med rare.

It was delicious but I think it'd be better on a mallard sized duck. Not much meat on a teal.

There might be more meat on a mallard but teal are some dang tasty birds. Only better tasting duck in my opinion is wood ducks.
