Hunted all my life but never tried squirrel, anyone got any foolproof recipes for it?

My Dad used to say: "take your favorite chicken recipe, and substitute squirrel." :)

Simply parboil until tender and batter up and fry like chicken, make your gravy, mashed potatoes and biscuits and you are done...

I fry it like chicken, then let it simmer in the gravey for 1 to 2 hours. You have to thin the gravey with a little water several times, as necessary. Check tenderness and when it suits you it's ready to eat. Normally, I can hold a front leg by the tip, put it in my mouth, and pull mostly the bone out.

I mix salt and black pepper in flour. Rinse squirrel so damp. Coat with flour mixture. Put oil in iron skillet or Dutch oven. When oil hot brown on both sides. I also Add a chopped onion. Add a pack or 2 of dry onion soup mix. Cover with water or broth. Summer until tender May take a few hours. You will have squirrel and gravy.
