Boiled Peanuts

On another thread Pattersonj11 asked for boiled peanut recipes...so here you go:

In a large pot put green (not dried) peanuts in the shell that are washed thoroughly and cover with enough water so they can loosely boil.

Add enough salt to the water tastes almost "like the ocean" and bring to a low rolling boil. If you want spicy goobers add hot sauce, sliced jalapenos or whatever source of heat to your flavor profile.

After 30 minutes check a couple nuts for doneness- you want them done to semi soft with a bit of chew but not cooked to a pulp. Depending upon the quantity of nuts in the pot this can take an hour or 2 (or longer). Check periodically until nuts are almost done to your preferred texture and remove the pot from stove or turn off burner.

Let nuts steep or soak in brine, checking periodically for saltiness- as they rest and begin to cool the nuts will absorb the salt so you control the salinity within the nuts by checking soak time.

When nuts are at proper salinity remove from salt water and eat- note they are easily bagged in zip-loc freezer bags and frozen for storage.

If you prefer to reheat you can bring a pot of water to a boil and dump in the thawed nuts for just a minute or 2 to heat- then drain before eating (this does remove some salinity).

I love making boiled peanuts in the crock pot. I will boil em in beer sometimes. Along with some Cracker Boy/Girl seasoning.
