Did some hot and fast chicken quarters Friday so I took the quarters and pulled the meat from the bone and made sorta kinda quesadillas on the black stone.

Scrub

Took a whole chicken wiped it dry then oiled it up with some olive oil and put my rub on it with thyme,rosemary,sage,bourbon smoked paprika, onion powder, garlic powder,salt, and coarse black pepper. Had the Green Egg on indirect heat 375 degrees. Put the chicken in a hot cast iron pan with a light coat of olive oil, then surrounded it with cubed potatoes and onions that were tossed in olive oil and the remainder of the rub. Indirect heat for about an hour or so and added some chunks of mockernut hickory I harvested from my land. It was unbelievably good. I’ve read a lot of things about hickory and some claim it’s the best hickory to smoke with and I believe it now.

Hamburger steak with mushroom and onion gravy last night; baked chicken thighs, couscous and collards tonight. Both with the best of company

A family that got a pup from us in February brought down som kielbasa from NY. That was the best I’ve ever eaten.
Thanks for reminding me mine is a store bought subpar piece of meat. There isn't anything better than authentic northern kielbasa. There's a website called Piast that has GREAT kielbasa and pierogi

I’ll have to check it out. This was the first that I really went crazy over. You are absolutely right, nothing better than the real deal from up north, I am tempted to get them to send some more down.
