there’s a place in Gainesville, FL that makes a chili Colorado that’ll plum burn your tongue out

I'm excited to see how it turns out. I hope it's not too hot. Family likes spicy. Just not my idea of spicy.

When I was toasting the chiles, wife(in living room) and boys(in their room) started coughing and getting teary eyed.

I didn't share their reaction. Must be all the CS. Lol.

Following Aarón Sánchez's Chile Colorado recipe. About to put this Dutch in the oven for another 2¹/² hours.

Well, for my first run, it turned out d*** good!

Was at the top of the family's heat range, and crept far enough into mine that I didn't need to add cayenne.

For our tastes, I'll probably reduce the cinnamon by half. Not overbearing, by any means, just a touch more than we like.

Been working on it since 2:45ish. I give it 4 out of 4 Sombreros, and will do it again.
