small whole chicken. oiled and seasoned with generic cajun, inside and out. stuffed with half a granny smith, most of one lemon and 2 tbsp butter. about 4 tbsp butter and seasoning under skin.

indirect on the charcoal grill at 275 for about 4 hours. little cherry wood smoke in the beginning. threw in some jalapenos and a head of broccoli seasoned with olive oil and garlic salt in a bath of beer. (rogue, dead guy)
