been wanting this for a while - a stew made like I did when I was a yuute,,,

elk meat, potatoes, carrots, onions, garlic cloves, seasoned up, some worchestershire sauce, couple cups beef broth

oh yeah, half a handful of barley

cooked in pressure cooker

kind of hot weather for stew, but it was worth it

I took my parent's to the preferred anniversary meal destination today. Storm delayed the trip. Beck's in Calabash. Ella's of Calabash was their favorite but it is to rebuilt due to fire. But they are essentially the same. OMG...the deluxe seafood platter was excellent!! I added NOTHING to the food. Y'all know how I like pepper, but salt even more. I don't remember not adding salt to food. Anyhow...the scallops were perfect. Oysters more so. So much they have a close up. Shrimp were great. 🤤🤤🤤 Almost ordered a large fried oyster plate. May next time. Look and weep. Lol
Couldn't get dad to look at phone..couldn't hear me. Does well for 94. Mom 89.

Sunday night is usually a trial run for lunch next five days. Usually chicken and rice of some sort. This week it’s “teriyaki” beef, “stir fried veggies” and rice. The veggies were a welcome break to chicken thighs and rice 11 of the last 14 weeks.

Quotes for teriyaki, because it was pressure cooked with teriyaki but it dang sure don’t take like anything but overcooked, dried salty beef…

And the veggies were the frozen stir fry kits.

Cleaning out the fridge tacos. Pork tenderloin, avocado, lettuce, onions, pickled jalapenos. No taco sauce so I mixed some Frank's, a little adobo sauce from some chipotle peppers, garlic and mayo. Not bad but I prefer just cilantro, onion, and lime on a pork taco.

got me one of those air fryers and gave it it's first go tonight.

stuffed a couple chicken breast with prosuto a few pepperoni, feta and black olive. flour/egg/breadcrumbs

Also baked some sliced zucchini with garlic, salt, pepper, paprika and fresh grated parm.
fryer worked well. chicken was really tender and juicy.

Looks great....the air fryer is a good purchase we use ours very often....I fried some small catfish fillets Saturday in mine and they are just as good as deep fried in oil

Kids kept bugging me to get one. Maybe they will start cooking for me now....🙄😆

I've got a few fillets floating around in freezer land. will give it a shot.
Chicken wings are high on the list too.

I love smoking some wings till they are about done then putting them in the air fryer to finish them off. Does a great job getting that skin crispy after smoking.
have been wanting to smoke some wings for a while now. Haven't do to how the skins turn out (thick and NOT crispy)
will give it a go soon.

Marinated fish (mahi from the ocean fishing trip) with tomatoes and olives. Garlic, onions, some spices, olive oil, etc. Baked in toaster oven. From my Mediterranean Cooking cookbook. Usually don't eat until after work, but woke up hungry this morning. Good stuff, just needs rice.

threw a london broil on the smoker til she was about 90° then pulled it for a few to let the grilled heat up. Put it back on to sear.
Made my 1st batch of fries in the air fryer (was not impressed with results)

Turned out ok. Cooked well but the flavor was off with the smoke. Much prefer straight off the HOT grill.
Fries did not come out as good as the frying in oil. I might look up a recipe next time. 😆 I did not coat them in oil before air frying. I think that would help.

Fries will never come out as good as frying in oil, doesn’t matter what ya do😁 That ‘fryer’ is nothing more than a broiler.
