What to plant for border screening cover

Just had a timber harvest, looking for recommendations on what to plant for screening cover, near term and long term. I'm going to use some Egyptian wheat for quick growth this season, but would like to have something growing in staggered rows behind that for a more long term, permanent, solution. I'm located between the Piedmont and coastal regions.
Long term I would recommend 10 foot wide swath of bicolor lespedeza and two alternating rows of red cedar. Stay away from ornamental cypress and cedars as they are prone to disease and parasites.

We are going to try to get standing corn this year around 2, .5 acre plots possibly with some sunflowers or Millet mixed in. The grass blends are crazy expensive.
