I don't understand why someone would want to wait two to three years to eat a deer when it's tough as hell when you can you kill a nice tender one with milk dripping from it's mouth.

lambs and fat calves are where its at. Follows that purveyors of venison would follow suit and treat themselves to the best!

Last year on opening day of bow season. I had a spike milling around right in front of me. Tiny spike, little bitty horns. Like, 2&1/2 inches long, skinnier than a pencil easy. Tiny body. My estimation was it had just been born last summer.

After the hunt. I came out of the woods. Landowner (really good friend of mine) was on his porch with his wife. I walked up and he said "Well ?" I recounted the story of the tiny deer and told him when cleaned, the whole thing would have fit on his Traeger grill.
He honestly looked at me and said
"So, that'd be fine !"..... "Tender meat AND you get a buck !" His wife started laughing and told me she understood. And kept laughing.
He was serious.

ETA---- Shoot what you want. Eat what you want.
