Simple Venison Roast

took a small roast
placed in pan with a bit of peppered olive oil rubbed on it
seasoned well with garlic pepper
grill is on the blink so baked in a flat pan at 385 for 45 minutes (till barely medium rare)
removed, let sit for a few minutes, then sliced

served with a nice salad, some "Flattened Fried Taters", and a few spring onions,,,,as well as a little horseradish,,,cause it goes well with rare red meat

Flattened Fried Taters

boil some small young potatoes
slice an onion and saute in a fry pan with a bit of butter and olive oil,,,

when potatoes are done, gentle flatten some and add to onions in pan

saute them a bit to get a nice little crust,,season as choice (I only do pepper and a bit of garlic - don't do salt much but some will want to salt)
