Sausage And ground venison

I usually use a pork picnic to add to my deer sausage . I have don’t ground venison in a while. I walked into 10 pounds of beef fat (trimmings). Has any one tried that with ground venison or deer sausage? The pork adds a good flavor.

Twice a yesr we buy a USDA choice beef loin,,, trim it up, cut into steaks, and have a family outstanding steak meal or three


i use the fat trimmings to mix with venison for the richest summer sausage you will find

some folks this winter will get a taste

At what ratio do you mix beef fat/trimmings for plain ground venison for burgers etc?


normally I don't add beef fat for burgers or meatloaf (prefer meatloaf),,,my wife has a method that works (I'd have to get it from her)

but generally,,,no more that 25%,,,,I'd do 10%,,,,basically what level of leanness on ground beef would you buy (90%, 85%, etc)

I have added pork or beef depending on what I have available. You could get free beef fat from butchers at grocery stores but it seems more and more grocery stores are eliminating the in-store butcher.
