Rubbery sausage

Made a bunch of sausage patties and froze them. Over worked the meat. They’re rubbery. Wife said trash them. I think she’s right. But, I don’t want to disrespect the animal. Any ideas on what I can do w a few lbs of rubbery breakfast sausage patties? (As in recipes, etc)

We make Zucchini boats. We use broken up sausage as one of the ingredients. Same as in a breakfast hobo.

thanks, folks. Yeah I think the only option is chop it up and put into a casserole. Since it’s cooked already most of the other stuff here isn’t going to work.
