Saw this recipe in the Fayetteville Observer. A little variation of southern cooked/fried rabbit. Simple recipe that should be delicious. I will likely flour and fry rabbit or dip rabbit in egg wash then flour and fry. Recipe calls for simmering for 3 hours or until tender. That is what I do when cooking rabbit, squirrel or quail. It will be a few weeks before I prepare this recipe. I'll provide feedback afterwards. Included is the ingredient list for Emeril's Essence.
