Sorry I can't take credit for this but it is by far the best potato soup that I have ever made/eaten. Couple of gotchas though. If you want potato chunks at the end of 4-5 hours then cut them larger than 1" OR add some cubes half hour before you are ready to eat it. My son says there wasn't enough bacon so next time I will cook more or make a smaller batch. I was making it for my large extended family. It has some heat to it bit I would be afraid to change anything, it's that good. Get some good bread and make some cheese toast with the broiler. Get the cheese brown and dip the cheese toast in the soup.
