Old Mossy Horns
Saw these on the ‘gram, figured I’d give em a run.

Chunk of fresh back strap, filleted out flat. Brush with a paste of olive oil, basil, oregano and garlic. Layer of prosciutto and a layer of provolone. Roll it up tight, salt and fire. Not bad, not bad at all.
