Cut loins or chops 1”-1 1/2” thick salt and pepper well.. Get a cast iron pan smoking hot medium high heat add a little peanut oil throw loin in don’t turn it for 3 minutes. Once you turn it put it in the oven that’s preheated at 375 for 5-7 mins. Take it out put on a plate cover with tinfoil. Put pan back on heat pour in 1/2 cup of beef broth and about a 1/4 cup or more of diced up mushrooms, scrape pan to get bits off let it simmer till it reduces to about half(maybe 5mins). Then add 1 teaspoon minced garlic , 1 tablespoon of Worcestershire sauce and slowly add 3 tablespoons of butter(stick) one tablespoon at a time. Mix it up until it all mixes together. Spoon over loin chops and serve. It’s crazy good.
