That’s the same rule of thumb I use with wild game for the first few meals. Very little “additives” and enjoy the flavor of the meat itself. Then get more extravagant after I know what it tastes like by itself

We've been pickling (after cutting into long strips) Elm Oysters the last few years and really enjoy them around the fire with a beer. Been a big hit on Saturday nights.

These are the first ones I’ve ever found and I stumbled upon them. We were surveying around an abandoned house and they were all within 20’ of an elm tree. There were elms all over the property but I only found some on the shadiest side where the ground stayed really damp even when it was 70 and sunny. Some were close to the base of the tree and others weren’t. I even went back after work and found one more in the same area but hoping tomorrow I’ll find another pocket of themThat one has alluded me, I’ve found about everything else but morels are my nemesis. What kind of area did you find it in? What trees?

with all this rain they should be poppin.Found a good amount of oysters up on the mountain in Kentucky. Thanks to @Helium and @Scrub helping me confirm/ID. They don’t look too pleasant in the bag, as I had to fight a colony of fire ants and centipedes to get em off the logs. This was one of the better pics before harvesting but I ended up with bout 2lbs total
