Moose Tartare

so it's moose permit application season for 2020 and I had saved one last package of the last moose I had a small part in helping get out of the woods (and tote shooting sticks!!)

Been a long time since I ate meat "tartare" and seen a show where they made some - so I was like "perfect way to eat the last of ol' Maine bullwinkle",,,

my derivation of the myriad of tartare recipes out there

ingredients

1/4 lb moose meat, finely chopped
1/4 of a normal onion, finely chopped
3 tablespoons capers, finely chopped
1/8 cup red wine vinegar
couple of dashs olive oil (call it 3 tablespoons)
pepper to taste

mix
mold
set on plate

I skipped the egg yolk in the center that some recipes (most) call for - not how we did it as a kid and I've had enough eggs today (breakfast)

pretty dang good to me on the ol' Ritz crackers

now I NEED to draw a tag somewhere,,,,moose is too good of eats
