Lamb Loin Chops

I know it ain't wild game but it was still pretty good. My girlfriend was out of town last night and that just left me and the dog who are the only two that like good red meat in this boondoggle. The food lion near my place has started selling lamb loin chops and they are pretty daggone good. Anywho, last night after listening to "All by Myself" by Eric Carmen and drinking old red wine I commenced to making the lamb. Nothing fancy but really good.

  • Pay chops dry
  • Season liberally with salt and pepper
  • Let sit on the counter for about 25 minutes to bring close to room temp
  • Heat olive oil over medium high heat in a cast iron skillet
  • Put chops into and leave undisturbed for 3 minutes
  • Flip and cook another 3 minutes undisturbed
  • Melt butter and rosemary in skillet
  • Baste the chops
  • Remove from pan and let rest
  • Enjoy. If you are a dog, act like a good boy to get a taste!

yeap, that lamb that food lion sells is pretty good,,,,I like lamb

what am I saying,,,,,I like meat, of all forms!

nice job and the pup is saying "come on boss,,,toss me some"

Old Mossy Horns
Cook some lamb chops a few weeks back. Sure was some good stuff.
Did lamb shanks and beans last week when I had the smoker going.

Yeah those little chops from food lion are the ticket and really cook up nice. The pup got a taste, he was pleased!
