The fall woods and the spring woods each has its own unique, wonderful smell. I love each of them for nearly the same reason...only one has feathers and one has fur. In either season, the first time I experience that aroma it lights me up like a Christmas tree. :)

In no particular order
Coffee
Burnt gunpowder
Curing tobacco
Freshly tilled earth in the spring
Crops being harvested in the fall
Bacon
Hardwood burning

I'd have to add tobacco after it had been packed down for a few weeks
Cut hay that has laid out in the sun for a full day
Corn bloom, smells like fresh cut watermelon
Wisteria blooming
The spicy smell of a thick stand of aspen trees when the leaves were turning yellow
Walking through thick Wyoming sagebrush
Burning jet fuel
Slipping through the swamp in my one man sneak boat
Last but not least, the smell of Hoppe's #9. This brings back memories of my Dad returning from a hunting trip and sitting in the kitchen dining area cleaning his gun and relating the events of the hunt to me, a knot headed kid of 6-7-8 who dreamed of the day that I could join him and the other men.

I'd add sawgrass either from the dunes at the beach or the marsh on a cold mornings duck hunt.

I have yet to find out what plant produces it but it has a sweet tobacco-ish smell like my grandmother's peach snuff. I've smelled it from the Carolinas to central Florida and if I could find the source I'd plant an acre of it.

Possibly a weed found usually in poor soil and commonly called "rabbit tobacco", less commonly known as "Life everlasting", used for medicinal properties and smoked or chewed by damned near every NC countryboy at one time or another.

The smell walking in my great aunts kitchen, it was the salted meat used for seasoning.
