Kill it. Cut off all the fat and esophagus.
Let it stand on the counter.
Season with salt, pepper, Olive oil, and baste with BBQ sauce and franks redhot.
Bake on 275* covered in the oven for 3-4 hrs flipping once. It will shred to a fork when it’s done
Baste it again with the bbq and hotsauce mix and throw on a hot grill tented with foil for about 5 minutes a side.
