I've been absent from the recipe section a while,,,
got some duck gizzards cooking
1 lb duck gzzards,,,cleaned and prepped
throw into electric pressure cooker
season with Cracker Boy and ground pepper
cut up some yellow onion and throw in there
dash or 7 of olive oil (extra virgin or well sullied)
can of duck broth (use chicken broth if you don't make duck broth)
set to 24 minutes and wait
(more to follow - the night is young)
after initial cook released pressure,,,added 1/2 lb hearts and set for 10 more minutes of pressure
steamed Boudin with a dash of Don's Seasoning Salt on it
cooked some sticky rice
prepped some veggies (man needs his veggies)
right good if I say so myself,,,you won't beleive how tender them gizzards are,,,,
