Finished pie. Eggplant slices for crust seasoned and browned under broiler then pressed in pie pan.... filling is chopped tomatoes, green peppers, onions, cheese and Italian spices.
Bacon could be a good add. If it was just me some jalapeno would of found its way in. Its just a great dish when the gardens are producing....ive added some squash in the past. This didn't set up as well as I would of hoped the tomatoes had just to much juice.
Actually had eggplant the other day, chopped up eggplant, zucchini, onion, pepper, mushrooms - olive oil and garlic powder, BBQ them up
remove and put in a bowl, add some greek salad dressing and a bunch of feta cheese, mix it up and serve with a big ole hunk of steak
