Creamy Squirrel Alfredo

Going Coastal

Thought I would try something different than the traditional ways to fix squirrel.

Put two squirrels I shot the other day in the pressure cooker with a can of chicken broth with salt and pepper and tablespoon of oil.
Cooked on high for thirty mins. saved the broth and picked all the meat off the bones. ( only got two shot out of the meat before cooking)

Sauted a diced onion, clove of garlic and can of portabella mushrooms in some olive oil until onions are translucent.

Add the squirrel meat and some broth into the same pan, heating everything and add a jar of Classico Creamy Alfredo sauce and simmer over med. heat adding some parsley flakes.
Made some no yolks noddles to pour the Squirrel Alfredo over.
Sides of roasted veggies and toasted french bread.

I am telling ya guys.... it was great.

Seems like very little shot. Bigger shot will go through and not be in the meat. Just a thing to keep in mind for small game. 4s and 5s should go right on through.

I normally use a full choke and #6 shot, aim around 6 inches in front of the head depending on the distance. Does the trick for me. I get a few flyers in the body.

Looks really good, and I'm sure it is. But you and Kris are putting some fancy touches on po' folks food. Imagination is a wonderful thing.
