Couple new Jerky Recipes


Twelve Pointer
Cleaning out the last bit of deer meat in the freezer and have been experimenting with new jerky recipes. I have my go-to flavors, but wanted to change things up.

1st one: Blueberry Bourbon Jerky
2lbs venison
1 1/2 cup blueberries
3 tablespoon brown sugar
1 tablespoon black pepper
3 tablespoons worchestersire sauce
1/4 cup apple cider vinegar
1 tablespoon liquid smoke (optional)
1 cup favorite bourbon

Put all ingredients in a blender, blend until liquid consistency. Pour over your deer meat and let it marinate for 12-24 hours. Put in dehydrator for your desired time. I was very surprised at the flavor of this. Bourbon gives it a little bite, blueberries get you some sweetness. Liquid smoke for those of us who like a smoky flavor.

Next: Smoky Beer Jerky
2 lbs venison
1/2 cup worchestersire sauce
1/2 cup soy sauce
1/2 cup dark beer your choice (I went with Sam Adams Winter Lager)
2 tsp honey
1 tsp onion powder
1 tablespoon black pepper
1 tablespoon liquid smoke, eliminate this if you don't like smoke or you use a smoky beer.

If you like darker beers, then you will like this one. I actually put a whole cup of beer in my recipe, but my wife said it was too "beer tasting" in that one, so I dropped next batch to half cup and she liked it.


Old Mossy Horns
Nice recipes. Have you tried longer marinating times? I like 3 or 4 days in the refrigerator. I can usually tell its ready for drying when most of the liquid has been absorbed into the meat.
