PSA: the best resource I know of for cajun cooking is tigerdroppings.com (LSU message board with a recipe forum). Just search "tigerdroppings boudin recipe" and have fun. Much better an more "authentic" than anything else I can think of including big name chefs. I agree that boudin is one of the best foods every created. I don't think I could ever get tired of it. Gonna do something this weekend that I've never done...make it without liver in an effort to covert my 13yo. My ten year old has loved it ever since he could chew and doesn't bat an eye at the liver, but other one is stubborn. Going to be 4:1 ratio wild pig to deer with a little store bought pork fat thrown in for good measure. 1 cup cooked rice for every lb of meet is the ratio I've found works for me.

Boudin is where it’s at. Made more than a few people mad from taking up a store parking lot to get some in my hauler when I’d run through La.
