I tried that buttermilk fried rabbit/quail recipe of Hank Shaw's on the squirrel this evening. Soaked it in buttermilk and some spices for an hour or so, shook it up in a bag of flour and salt, and fried it in a Dutch oven. Had it with boiled Yukon potatoes and peas and a beer. The meat was a little tough since I forgot about par-boiling it first, but it was still DELICIOUS!!!!! Taking the leftovers to work for lunch tomorrow.
Apart from fish, this was my first home-cooked meal from the wild and the first time I had squirrel. I think I'm addicted now!
