My wife and granddaughter called this concoction "Indian-Mediterranean Fusion" cooking,,,,
Ingredients
two turkey thighs
pepper
1 cup turkey broth (chicken broth can substitute)
jar of Butter Chicken Simmer Sauce
1/2 stick of butter
put turkey broth in bottom of pressure cooker then I put my meat stand in and placed the thighs on top (I wanted them to not soak in the juice). Season both sides of thigh with pepper to preference.
pressure cook for 25 minutes
shred/cut to serving sizes,,,I left mine a little bigger than bite sized
then place in skillet, smother with the butter curry sauce and add the butter
simmer for 15 minutes
served with Mediterranean Quinoa (daughter gave me a steamer bag of this)
and then chow down...
