Cleaned quail cut down the back so it lays flat

melt 1/4 lb butter add thyme flakes and some garlic powder
Rub quail liberally with seasoned butter
Bake at 375 for 15 min, basting once or twice
Remove from oven, tent with aluminum foil and let rest 10 minutes

Looks good! I like to smoke them. Put them in an aluminum tray with all the legs facing the middle and lay a couple of strips of bacon across the legs so they don't overcook, and smoke at 225 for 1.5-2 hours. But I hardly ever pluck mine, skinning is so much faster! That skin sure is tasty, but I'm usually cleaning 30 or 40 at a time and it just ain't worth it!
 
I just breast my dove and quail out. No plucking . Not enough meat to pluck. My 2 of course. Kinda like this but I dont pluck the feathers I just peel the skin feathers in all. <iframe width="762" height="424" src="
