Cajun Fried Speckled Trout

Old Mossy Horns
Nothing overly complex here, but the flavor differs from any other fried fish I've cooked/eaten personally......

Step 1. catch trout
Step 2. fillet trout
Step 3. soak fillets in 3 parts yellow mustard/1 part texas pete
Step 4. coat wet fillets with your favorite breader (I use House Autry Seafood Breader and mix in some Panko)
Step 5. Fry
Step 6. Dust with Tony Chacheres (I use the spicy version)

You might think you need to shake off a lot of the mustard mix.....don't. Don't leave it dripping off, but do leave a good bit on the fillet before adding breader.

We enjoyed the fish so much that we’re cooking more again tonight. Awesome flavor on a “IMO” bland fish like flounder.

Glad you enjoyed it. I’ve got fresh trout and flounder fillets in the fridge that don’t even know yet that they will be getting a mustard bath this evening.

Did your mustard recipe on kings tonight. No seafood breader just panko. Baked at 350 for 23 minutes. Amazing and a lot less sodium.
